02 - 1.75 oz grated Parmesan cheese

04 - 1 sheet (8.8 oz) all-butter ready-rolled puff pastry, thawed if frozen

05 - 0.5 tsp smoked paprika
06 - 0.5 tsp dried oregano
07 - 0.25 tsp freshly ground black pepper
08 - 0.25 tsp chili flakes (optional)
09 - 0.25 tsp salt

# Directions:

01 - Preheat the oven to 400°F. Line a baking tray with parchment paper.
02 - In a mixing bowl, blend grated cheddar, Parmesan, smoked paprika, dried oregano, black pepper, chili flakes if using, and salt until evenly mixed.
03 - Unroll the thawed puff pastry sheet onto a lightly floured surface. Evenly distribute the cheese and spice mixture over the entire surface.
04 - Using a rolling pin, gently press the cheese-spice mixture into the puff pastry to help it adhere.
05 - Cut the pastry into 24 equal squares or rectangles using a sharp knife or pizza cutter.
06 - Place the cut pieces on the prepared baking tray, spacing them slightly apart.
07 - Brush the tops of each piece with the beaten egg to achieve a golden finish when baked.
08 - Bake for 15 to 18 minutes until the pastry is puffed and golden brown.
09 - Transfer the baked bites to a wire rack and allow them to cool slightly before serving.
